A Texas-size Wedding and Big Crowd Food

Last Saturday, I attended a wedding! One of my many nieces said her vows with just the right guy, Em and Zane. The wedding, held in Trinidad, TX, was long because, well, it was in Texas, but also because my sisters all love a great party. Em’s mom, Lee, is just like our mom in that she loves a dance floor, good food, and lots of family.

To that end, she invited us, (five of The Sisters) to Texas for a five-day, four-night family party. She rented an AirBnB that could sleep 16 plus. At one point, we were probably 18ish. I’m not really sure. Remember, I’m not one for numbers. That’s not important: we had a grand time. I was responsible for chicken salad and pralines. Both are foods I love to fix. I offered to add BBQ chicken to the roster since I’d have lots of thighs and (it turns out) pieces of breasts. It turned out we didn’t need the barbecue.

One huge bowl of chicken salad with pecans, sliced grapes, and dried cranberries. Yum! I actually brought some back home since it was still fresh. Friday and about 100 pralines later, we managed to prepare ourselves for dinner. We had reservations at Fig’s Backyard, which was enjoyable except we had trouble hearing people around our table. I had a beautiful Strawberry Lemon salad. I didn’t want to take any chances in my new clothes, so the ribs were off the table, literally. But I heard they were “sooo good.”

Rich has eaten chicken salad for every meal until tonight since I cooked a huge, thick soup. We’ll never finish that soup! Rich cooked a pork gravy that was too spicy, so it became the base of the soup. He also picked some greens from the garden, mustard, chard, and collards. Way too much for the soup, but I’ll put the extra in the freezer tomorrow. Then he drove to the local grocery to buy Irish potatoes, turnips, sweet potatoes, and carrots. So leaves and root veggies. I added brown rice and quinoa for starch, tomatoes, and a mixed veggies from the pantry. Well, I got a little off the subject of the wedding. It was beautiful, so I hope to have more photos to share with you later. Meanwhile, here are a few photos of the AirBnB.
